How to turn Novel Excerpts into Short Stories

So few writing contests offer opportunities to submit novel excerpts. So I've had a brilliant idea which has in turn generated an equally brilliant, if perplexing, question -> how to turn the basics of an exciting scene or chapter of a novel into a short story which can stand on its own?
PS - any chance of an on-line course for this?

Cathy, what a great idea for a short story course! You have hit on a problem and there are specific differences between novel excerpts and short stories, so I can see where course such as you suggest would be beneficial to a lot of writers. The main difference is in the number of times the central conflict is addressed, and in the development of all the fictional elements.
